Second vacation



This weekend could be like a second vacation since three of my kids went up north with my mom this morning. However, Jon and I decided to spend this mini vacation doing a marathon cooking spree instead. We started right after the kids left at 9:30 this morning. We purchased our supplies on Thursday night, a marathon in and of itself...

I found the recipes, grocery list, instructions, and labels at a site called Once a Month Moms. The idea is that you spend one or two days cooking and prepping and make freezable foods that should last you through most of a month. We decided that it was a really good idea to help us get through the semester that begins again in about a month :( This way our family can eat wholesome home cooked meals, even though we don't have time to cook wholesome home cooked meals. Many of the meals can be taken right from the freezer and put in the oven, while other require a little bit of prep. It ends up being just one less thing to worry about during a time when we are juggling so much. We are hoping that these meals can get us through September and some of October. Sometime in October we might have to do it again to see if we can get through the second half of the semester. Initially we wanted to do it again in August, but we are not really sure we will have enough freezer space for it.



We cooked for 6 hours today, battled one coconut, made like five recipes (each for two to four meals). Four recipes left for tomorrow...



(Oh, and two Mike's Margaritas each :)
